Grain/gluten-free Dairy Free Cinnamon Swirl Muffins

Yum, these are good!

Cinnamon Swirl Muffins

  • 2 1/2 c. almond flour
  • 1 Tbsp. coconut flour
  • 1 tsp. ground cinnamon
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2 eggs
  • 1/2 c. plus 1 Tbsp. coconut milk
  • 1/2 c. honey

Topping Ingredients:

  • 2 Tbsp. honey
    1 Tbsp. ground cinnamon
    1 Tbsp. melted coconut oil

Preheat oven to 325°F.  Mix together the dry ingredients, then the wet ingredients.  Stir together until mixed.  Divide batter evenly among 12 muffin cups (greased or lined with paper).

Mix topping ingredients in a separate bowl, and drizzle over the muffins.  Bake for 20 to 25 minutes until golden brown.
