This is my $8.16 menu (that's all I had to spend!)


April 7 – 13, 2013


Sunday:

breakfast – breakfast bake

lunch – cheeseburger salad

dinner – baked parmesan tilapia, coleslaw, butternut squash


Monday:

breakfast – pumpkin custard, veggie juice

lunch - New England clam chowder, salad

dinner – baked chicken strips, oven fries, steamed broccoli


Tuesday:

breakfast – sausage gravy & grain-free biscuits, veggie juice

lunch – tuna/tomato/avocado salad

dinner – ham roast, baked apples & butternut squash


Wednesday:

breakfast – poached eggs w/ veggie hash

lunch – homemade mini pizzas, salad

dinner – beef & cheesy spaghetti squash casserole, salad


Thursday:

breakfast – breakfast bake

lunch – leftovers

dinner – broccoli & ham chowder, grain-free cinnamon muffins


Friday:

breakfast – eggs in ham cups

lunch – salmon patties, side salad

dinner – sausage/pepper/potato skillet


Saturday:

breakfast - FFY

lunch – doggie skillet meal

dinner – homemade pizza

I've been meaning to ask-whats a cheeseburger salad?


also, we love mini pizzas! Have you ever tried them on pita bread or anything like that?

Cheeseburger salad:  1 lb. ground beef, browned;  6 to 8 cups torn salad greens; 1 large tomato, diced; 24 oz. jar dill pickles, drained and chopped (we like pickles!); sliced green onion; 2 c. (8 oz.) shredded cheddar cheese; dressing made of 3/4 to 1 c. mayonnaise and 3 Tbsp. prepared yellow mustard

I used to make my own pita bread!  We used to make mini pizzas using English muffins, too.  Now that we don't eat grain foods (no bread/cereal/pasta/etc.) I'll be making pizza crust from almond flour/olive oil/egg/parmesan cheese and dividing it up for individual sized pizzas.

Breakfasts - blueberry muffins, cereal, oatmeal, waffles, Greek yogurt, fresh fruit, milk or OJ.

Lunches - leftovers, grilled cheese, fish sticks, soups, fruits and veggies.

Snacks - fruit, graham crackers, goldfish, popcorn, Popsicles.

Dinners - fajitas and corn, homemade pizza with cucumbers and ranch dip, tangy meatballs over rice with green beans, Parmesan Italian chicken with carrots and mashed potatoes, stir fry over rice, eat out.

Desserts - jello, berries with cool whip, cookies, pudding.

BREAKFASTS:  is usually cereal or a cereal bar of some sort.

LUNCHES:  Matt is on his own, but I'll be taking leftovers from dinners.

DINNERS:

Sunday:  Chicken Fajitas

Monday:  Warm Chicken Taco Salad

Tuesday:  Chicken Burgers

Wednesday:  Asparagus, Tomato & Red Pepper French Bread Pizzas

Thursday:  Chicken Caesar Pitas

Friday:  Chicken Burgers

Saturday:  Eat out:)

Sunday: had a wacky day, no plan & not much food in house. Result was sub sandwiches from local sub shop...

Monday: slow cooker three bean chili

Tuesday: ham steaks, brown rice & spinach

Wednesday: grilled chicken, baked potato, broccoli & salad

Thursday: pork loin with pasta & green beans

Friday: tilapia, veggie stir fry, quinoa

Saturday: steak, sweet potato, cauliflower
