down to one good arm....need ideas

I managed to get a ham roast going in the crock pot this morning ...wasn't too hard, just open the packaging and put it in the crock pot....but I need ideas for sides that will be easy for me to prepare with (majority) using just one hand, or else something simple that the kids/DH can fix fast.  I have another crockpot to use if I need it.

no pasta or rolls, thanks.

You could bake some sweet potatoes  ... very good with maple seasoning. If you like beets, prepare them (steam/boil) - they are especially good flavored with grape jam. Try a pignolia salad - yummy!

Sorry about the hand ... hope that you have a food processor.

Honestly? I would use the opportunity to make someone else cook!

good ideas!  I have some butternut squash left, and it's just as good as sweet potatoes with maple..and we have some real maple syrup from my uncle's syrup operation.  I also have pickled beets.

What's a pignolia salad?

Yes, I have a food processor!

How about a tossed salad, (if you have the ingredients prepped).

Mmm, sweet potatoes sound delicious with ham.

I was curious about the salad too so I did a google search. I could be wrong, but I think it's a salad with pine nuts in it...a pignoli salad. :-)

I make a grape (fresh fruit) orzo salad and you can use either pistachios or pine nuts.
