Post your favorite vegetable side dishes please! I need more ideas!

I am in need of new side dishes, veggies style!  Kid friendly ones too.

We like:

Green beans, fresh and canned
peas, frozen
carrots, raw or steamed
cauliflower, steamed or roasted
Broccoli, not my favorite but will eat
Asparagus

Garlicky Green Beans & Mushrooms (you can leave the shrooms out if you don't like them) --saute crushed garlic and beans in a bit of olive oil or butter until the beans are nearly done (5-8min) and toss in sliced fresh mushrooms and cook until they're tender, about 3 mintues.

Roasted carrots with cumin: toss chunks of carrot (or small whole ones) with olive oil and cumin seed, roast 20-40 minutes in whatever temperature of oven you're using for the rest of dinner...

Asparagus wrapped in proscuitto, grilled or broiled until crispy and browned (toss in olive oil before wrapping, to cook more evenly)

Minted Peas

Cook 'em, add a bit of butter and freshly chopped mint leaves (just one or two), toss to melt the butter. Mmmm....

Broccoli & Cheese Casserole

  • 4 c. cut broccoli (20 oz. frozen or 1 bunch fresh)
  • 1 c. chopped celery
  • 1 Tbsp. minced onion
  • 1 can cream of mushroom soup
  • 1 2 oz. jar pimento, drained
  • 3/4 c. sour cream
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 c. grated cheddar cheese

Cook broccoli, celery and onion together gently, until barely tender. Drain (save water for making soup!) Add remaining ingredients except cheese. Pour into a 2 1/2 quart casserole, sprinkle with grated cheese and bake uncovered for 20 minutes at 350 degrees.

Pea Salad

  • 1 16 oz. pkg frozen peas, thawed
  • 1 cup Miracle Whip or mayonnaise
  • 1 small white or red onion, diced
  • 1 cup finely shredded Cheddar cheese
  • 1/4 lb. bacon, cooked and crumbled
  • Salt and pepper to taste

Mix all ingredients except peas in a bowl. Stir in peas. Store in refrigerator
