Meatloaf recipes?

Any good meatloaf recipes? Ive been thinking about trying meatloaff. I was turned off by it years ago when my family made it with pretty much beef, ketchup and onions and well....I have never again touched it after that. So any good meatloaf recipes?

My family loves this with the provolone or without, although the provolone is preferred.  I don't make the sauce or use the prosciutto.

About This Recipe

"I saw this made on Foodtv. I'm not big on meatloaf but DH is so I thought I'd give it a try. It is quite tasty and DH really enjoyed it. I think this could be easily altered for different flavors or cuisines. It is supposed to be a healthier version of the one your mother made. I made this without the prosciutto."

Ingredients

    Tomato Sauce Topping

    • 1 (8 ounce) cans tomato sauce
    • 1 (6 ounce) cans tomato paste
    • 1/4 cup sugar substitute ( such as Splenda)
    • 2 teaspoons white vinegar or 2 teaspoons water

    Meatloaf

    • 2 lbs ground beef
    • 2 eggs
    • 1/2 cup grated parmesan cheese
    • 1/4 cup diced onions
    • 1/4 cup red bell peppers, diced ( roasted or fresh)
    • 2 tablespoons chopped fresh parsley leaves
    • 2 garlic cloves, minced
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon dried basil
    • 1 teaspoon kosher salt
    • 1/2 teaspoon ground black pepper
    • 1/4 lb prosciutto, thinly sliced (optional)
    • 1/2 lb provolone cheese, sliced

Directions

  1. Preheat oven to 350°F.
  2. In small bowl, combine tomato sauce topping ingredients and set aside.
  3. Add water to sauce to thin, as needed.
  4. In large bowl, combine beef, eggs, cheese, vegetables, herbs & seasonings.
  5. Place meat mixture on a wax paper-lined jellyroll pan or counter.

Directions

  1. Form meat into a 10x8-inch flat rectangle.
  2. Place prosciutto slices on the meatloaf mixture.
  3. Place the provolone slices on top.
  4. Starting with the short side, roll the meatloaf up (may need to use the wax paper to help).
  5. Seal ends and place, seam side down, into a loaf pan.
  6. Spread tomato sauce topping on the meatloaf, completely covering the top.
  7. Bake for 75 minutes (1 hour 15 minutes).
  8. Drain fat and let rest 10 minutes before serving.

 My meat loaf recipe

2 eggs

3/4 cup of milk

1/2 cup fine dry bread crumbs

1/4 cup finely chopped onion

2 tablespoos snipped parsley

1 teaspoon salt

1/2 teaspoon ground sage

1 1/2 lbs ground beef

 

Oven 350

Combine eggs and milk, stir in bread crumbs, onion, parsley, salt, sage and 1/8 teaspoon pepper.  Add beef, mix well.   Pat into a loaf or shallow baking pan.  Bake at 350 for 60 minutes.  If using loaf pan might have to cook a little longer.  Makes 6 servings.

 I would love to find a good meatloaf recipe but every time I make a new recipe nobody likes it :( so I just use the recipe on the Lipton onion soup box about every other time I make it.  Still on the hunt for one that gets NO complaints.

Ground Chuck makes a hearty meatloaf. A 2.5 lb meatloaf cooks well and if you need more, you should make two meatloaves. 3+ lbs cooks longer and forms a thick crust. For a small 1 lb meat loaf, you need to form your own loaf and bake it in a small shallow pan like a biscuit pan.

Worcestershire will help the meatloaf to cook hotter inside which is what you are wanting. Anything you add that melts will slow the inside cooking like chopped bacon, blending in pork or sausage, and cheese.

Liquid add-ins and vegetables add a lot of steam. Too much steam will dry it out so minimal use is best and dry seasonings to include onions is preferred to fresh. Just add all you're favorites to the saucy topping.

Hamburger, eggs, milk, bread crumbs, grated Parmesan cheese, McCormick meatloaf mix, Lipton beefy onion soup mix (both envelopes).  This is my personal recipe and everyone loves it- says they can't eat anyone's meatloaf but mine.

I grew up eating the mushy meatloaf with the slimy green pepper and onions in it that I had to drown in ketchup because it was so nasty. I hate when I have to eat meatloaf other people made and messed around with ingrediants until I got it the way I felt was good.

I like to make stuffing meatloaf...it is really simple, and tasty.


  • 1 Pound Ground Meat (Beef or Turkey)
  • 1 Egg
  • 1 Box Stuffing Mix
  • 1 Cup Water

Mix everything together, smoosh it into a loaf pan, and bake at 350 for about 45 minutes.

I also add in a bit of chopped onion and a few squirts of Worcestershire sauce.

This is what I do. If I don't have stuffing I use oats.

Cook this spiced-up meatloaf on a broiler pan so any excess fat can drip away. Line the bottom of the pan with foil for speedy clean up.

Ingredients

  • Preheat oven to 375°F. Coat a broiler pan with cooking spray.

  • In a large bowl, mix beef, turkey, egg whites, stuffing mix, onion, chili powder, cumin, chilies and half of enchilada sauce together. Shape into an oval with your hands and place on prepared broiler pan.

  • Cook for 1 hour, top with remaining enchilada sauce and bake for 5 minutes more. Slice into 6 pieces and serve.
