Autumn Treasure Green Salad

Makes 16 servings

Dressing

2/3 cup vegetable oil

1/3 cup lemon juice

¼ cup sugar

2 teaspoons chopped green onions

¾ teaspoon salt

1 teaspoon poppy seeds

Salad

8 cups torn mixed salad greens

2 medium red apples, chopped

2 pears, chopped

1 cup chopped pecans

1 cup (4 oz.) shredded Swiss cheese

1 cup dried cranberries

For the dressing, combine the oil, lemon juice, sugar, green onions, salt, and poppy seeds in a jar with a tight lid. Shake to combine. Refrigerate.

For the salad, combine the salad greens, apples, pears, pecans, cheese, and cranberries in a large bowl and toss lightly to combine. Just before serving, drizzle the dressing over the salad and toss gently. Serve immediately.
