we usually pour bbq sauce on it.. or try shake n bake. or sometimes its good when you just season it with a little salt and pepper.

Or put it in a pan and fry until white then heat the oven to 375 and bake, covered with bbq sauce for an hour...

Chicken & Rice Dinner

Please note: that all of my chicken recipes that call for chicken breasts are in halves.

1 tablespoon vegetable oil

4 skinless, boneless chicken breasts

1 can (10 3/4 ounces) Cream of Chicken Soup (I use Campbell's)

1 1/2 cups water

1/4 teaspoon paprika

1/4 teaspoon ground black pepper

2 cups uncooked instant white rice

2 cups fresh or frozen broccoli florets

  • Heat the oil in a 10-inch skillet over medium-high heat.  Add the chicken and cook for 10 minutes or until well browned on both sides.  Remove the chicken from the skillet.
  • Stir the soup, water, paprika and black pepper in the skillet and heat to a boil.  Stir in the rice and broccoli.  Reduce the heat to low.  Return the chicken to the skillet.  Sprinkle the chicken with additional paprika and black pepper.  Cover and cook for 5 minutes or until the chicken is cooked though.

RECIPE TIPS

  • Recipe Note: For a creamier dish, decrease the rice to 1 1/2 cups.
  • Easy Substitution: This recipe is also delicious using Cream of Mushroom Soup.

No-fry Chicken with a Crunch

4 boneless, skinless breasts (thawed)

1/2 tsp garlic powder

1/8 tsp of pepper

1/8 tsp of salt

3/4 cup of finely crushed corn flakes

1/4 cup of chicken stock(I use Swanson chicken stock)

Preheat oven to 400*

Combine corn flakes, salt, pepper, garlic powder into a shallow mixing bowl.

Dip breasts into stock and coat with corn flake mixture. Place chicken onto a baking sheet.

Bake for 20 minutes or until done.

please note: if you want it a little sweeter you can add honey graham crackers instead of corn flakes.
