 I'd buy him the ability to do the thing that is #1 on both mine AND HIS bucket lists and that is to spend the day at Discovery Cove swimming with and kissing dolphins. We plan to make that dream a reality within the next couple yrs at most.

Also I'd pay off his college loan so he can just enjoy his masters and not stress about the payments now.

 I would get his truck rigged out for welding. It would make him soooo happy which would make me really happy.

Either a newer, nicer car because his is a POS - but that would be kind of a self-serving gift because I'd get his old one. But besides that there's nothing he really wants/needs.
