Santa Fe Chicken & Rice
Spray skillet with cooking spray and heat. Add chicken, cook on medium heat until no longer pink. Stir in salsa, corn and beans and heat through . Sprinkle with cheese. You can also choose to add the rice before sprinkling with cheese. Remove from heat and letset until cheese melts a bit. Serve over the rice if you didn't mix it in.
Tasty Turkey Burgers
Combine all ingredients in large bowl. Shape into 6 patties. Pan-fry, broil, or grill until lightly browned and cooked through, about 5 minutes per side. Serve in hamburger buns with desired toppings.
My fave toppings: lettuce, tomato, onion, pickles, ketchup, and mayo.
Chicken Drumsticks Pierre
Mix together the flour, salt, and pepper. Coat the drum sticks with the seasoned flour. Melt the butter in a skillet with a lid. Brown the chicken over medium heat on all sides. Remove the chicken from the pan. In the same pan, combine the rest of the ingredients and bring to a boil. Reduce the heat, return the chicken to the pan, cover and simmer about 45 minutes. We like to serve this over hot boiled rice.Makes 8 servings.
Spicy Chicken Fillet Sandwiches
Combine pepper sauce and water in a small bowl. Combine the flour, salt, cayenne pepper, black pepper, onion powder, paprika, and garlic powder in another shallow bowl. Working with one fillet at a time, coat each piece with the flour, the dredge it in the diluted pepper sauce. Coat chicken once again in the flour mixture and place on a broiler pan. Repeat for all the chicken fillets. Broil in oven until golden brown on each side and fillets are cooked through completely. Serve each fillet on a hamburger bun with mayonnaise, lettuce and tomato.
NOTE: If you don't have a bread machine, you can make these by hand. Mix all ingredients except all the flour, add flour and work it in until it's all added. Knead dough 7 to 10 minutes, place in a greased bowl, cover and let rise until doubled. Continue with Step 2 in the directions.
Creamy Broccoli Soup:
Cut up fresh broccoli into flowerets and bits of stalk. Heat 2 cups water to boiling in saucepan. Add broccoli, celery and onion. Cover and boil until tender about 10 minutes, do not drain. If you prefer, put vegetables and some liquid in blender and blend until desired consistency (I don't do this step). Heat margarine in large saucepan over medium heat until melted. Add flour, salt and pepper. Cook, stirring constantly, for about 45 seconds. Gradually stir in 2 1/2 c. water, whisking or stirring constantly to prevent lumps. Add boullion and stir to dissolve. Add vegetables and cooking water, heat back to boiling, then remove from heat and stir in cream or milk. Serve.
Chicken & Rice Casserole
Wash chicken pieces (I prefer to remove the skin too). In 9 x 13 pan or baking dish, combine the rest of the ingredients and mix well. Add chicken pieces. Cover with foil and bake at 350 degrees for 1 hour.
Spicy Roast Chicken: (can be made in oven or crockpot)
Combine spices and rub all over chicken, being sure to get under the skin wherever possible and the inside cavity. Bake in oven (covered) at 325 for 1 1/2 to 2 1/2 hours depending on size of chicken OR place in crockpot, cover and cook on low for 8 to 10 hours.
