Is what's for dinner. I did cheat a bit, I got this new Kraft fresh take seasoning pack for free. I mixed it in ground meat my inlaws gave us.
I was going to put it in spaghetti sauce but my kids didn't want that. I have red potatoes from crawfish boil yesterday. I was going to make potato salad but I'm the only one that eats it. Does anybody have any ideas?

Roasted red potatoes are good
Line the bottom of a baking dish with 1/8-1/4 inch od evoo.
add onion seasoning mix (or any seasoning you like or just salt and pepper)
Cube red potatoes
Toss them in seasoning
Spread them evenly on a baking sheet and roast until done
They're really good! My Grandma made them for my wedding years ago and people still ask her about them.

Even if they are already boiled?
What about mashing them up and add potato toppings? Like cheese, Bacon bits and sour cream

Well I guess not if they're already boiled....mashed potatoes sound good.
You could alsi do twice baked potatoes...or fried potatoes (not really fried, crisped up in the skillet with a little salt pepper and butter)

It turned out awesome. I microwaved the potatoes them mashed them, added butter, sour cream, fresh Bacon bits then topped with Cheddar cheese and baked then for about 5 mins. The seasoning from the crawfish made it perfect
