We're having leftovers tonight. I have to figure out what and where we cooking for the rest of the week.

Total grocery costs for this week were $51.60.

May 13 – 19, 2012


Sunday:

breakfast – sausage/spinach/cheddar fritatta, oranges

lunch – creamy ham & broccoli soup, garlic flaxseed (grain-free) bread

dinner - chili cheese bake/tossed salad


Monday:

breakfast – ham & egg “muffins”, tomato slices

lunch – leftovers from Sunday dinner

dinner – hoisin-glazed pork chops/oriental coleslaw


Tuesday:

breakfast – peachy banana crepes

lunch – pizza soup, garlic flaxseed (grain-free) bread

dinner - honey mustard chicken/oven fries/green beans


Wednesday:

breakfast – chocolate grain-free granola, oranges

lunch – tuna patties, side salad

dinner - frosted meatloaf/green beans/tossed salad


Thursday:

breakfast – mexican omelet

lunch – leftovers from Wednesday dinner or chef salad

dinner - steak Diane/twice baked not-potato casserole/tossed salad


Friday:

breakfast – coconut kiwi dairy-free smoothie, hard boiled eggs

lunch – Mediterranean mackerel salad

dinner - chicken pot pie with paleo biscuit top crust


Saturday:

breakfast – fried eggs & hash browns, oranges

lunch – pizza burgers (no bun), Italian salad

dinner - beef roast/potatoes/carrots

Creamy Broccoli Soup:

  • 1 1/2 lbs fresh broccoli OR 16 oz. bag frozen broccoli;
  • 2 cups water;
  • 1 large stalk celery, chopped;
  • 1 medium onion (about 1/2 cup) chopped;
  • 2 Tbsp. margarine or butter;
  • 2 Tbsp. all purpose flour;
  • 2 1/2 c. water;
  • 1 Tbsp OR 3 cubes instant chicken boullion;
  • 3/4 tsp. salt;
  • 1/8 tsp. pepper;
  • 1/2 c. whipping cream, evaporated milk or milk.

Cut up fresh broccoli into flowerets and bits of stalk. Heat 2 cups water to boiling in saucepan. Add broccoli, celery and onion. Cover and boil until tender about 10 minutes, do not drain. If you prefer, put vegetables and some liquid in blender and blend until desired consistency (I don't do this step). Heat margarine in large saucepan over medium heat until melted. Add flour, salt and pepper. Cook, stirring constantly, for about 45 seconds. Gradually stir in 2 1/2 c. water, whisking or stirring constantly to prevent lumps. Add boullion and stir to dissolve. Add vegetables and cooking water, heat back to boiling, then remove from heat and stir in cream or milk. Serve.


and add pepperoni to this to make it pizza soup

Tomato/Basil/Pepper soup

  • 4 scallions or 4 small onions, sliced thin
  • 1 c. diced sweet red bell pepper
  • 2 Tbsp. butter
  • 28 to 32 oz. diced tomatoes, undrained
  • 1 3/4 c. chicken broth
  • 3/4 tsp. basil
  • Mozzarella cheese (optional)

Cook scallions/onions and peppers in butter until tender.  Add tomatoes, broth, and basil.  Bring to a boil and simmer for 10 minutes.  Top with shredded cheese.

NOTE:  you can also add diced pepperoni for a more "pizza" soup.

Monday- brisket, potatoes, veggies

Tuesday- Fish, rice pilaf, boiled carrots

Weds-Spaghetti w meatless crumbles and breaded zucchini

Thurs- Carribean chicken w rice and corn on the cob

Fri- Shepherd's pie

Sat- not cooking, the kids have bday parties

Sunday-Crock pot chicken, possibly w bbq sauce or salsa & chicken broth

Mon- Hamburgers, fries and veggies

 mon.- chicken nuggets and french fries

tues.- peas and potatoes soup with corn bread

weds.- tacos with mexican rice

thurs.- pork chops, rice and corn

thats as far as ive gotten so far.

hopefully my husband will catch some fish tomorrow when he goes fishing and we can have fish one day this week.
