I have seen watermelon and feta combinations on many recipe sites lately. It sounds nasty to me...what do you think?
Watermelon Salad
makes enough for two or three people
1/2 a medium sized watermelon, cubed (seeds removed)
1 scallion spring, sliced
2 springs of mint, roughly chopped
1 teaspoons apple cider vinegar
Juice of 1 lime
1 teaspoon honey
1/4 cup feta cheese
In a bowl combine watermelon, scallion, and mint, stirring to combine. In a separate small bowl, whisk together lime juice, apple cider vinegar, and honey. Pour over top of watermelon. Add in the feta and stir well to combine all ingredients. Serve immediately or refrigerate until ready to eat.

I usually don't like sweet in my salad but it was mixed with feta, greens, purple onion, cherry tomatoes, watermelon and topped with a balsamic dressing. I think it was the dressing that made it so good.
