Holy Green Tomatoes Batman!!!!

We are under a frost advisory and I have 9 tomato plants (i started them from seed for the first time!).  Well there were so so so many tomatoes that I hated to see them to go to waste.  So me and dh went out and picked all of them...I bet there is at least 10lbs maybe 15lbs.  I was just looking thru my canning cookbooks for green tomato recipes.  I found a few, one was Hot Pickled Green Tomatoes and the other was Green Tomato Relish. 

My question is have any of you tried either of these or have canning recipes for green tomatoes?  I can only eat so many green fried tomatoes!

Take the tomatoes and put them together in a paper grocery bag. Check on them in about a week. (During the week you are waiting, figure out what you are going to do with 10lbs or so of red tomatoes). Hope it helps!


Note:Make sure to fold over the bag so it is closed. The tomatoes emit a gas as they start to ripen that will ripen all the other tomatoes in the bag.

I've had green tomato relish, and my MIL makes green tomato/apple mince to use in pies.  I've got a recipe for green tomato jam (uses Jello to add flavors).

My mom told me if you put green ones ina paper bag in the basement and rotate them daily they will turn red.

I made the green tomato relish this summer. It's pretty good.
The green ones will ripen even if you leave them in the bowls or whatever you are currently holding them in too (no need for covering them) just checking for ripe ones often.

i usually just cover my tomato plants with old sheets the first frost or two. It protects the plants.    i've only used unripe tomatoes for fried green ones.
