Monday was pizza "cupcakes" with salad
Tuesday-picadillo & Asian slaw
Wednesday-chile relleños casserole
Thurs-spaghetti & salad
Fri-sausage, potatoes & peppers
Saturday-clear the fridge;)

 Sunday--chicken finger and french fries

Monday--Slow Cooker Sweet and Sour Kielbasa with rice

Tuesday--Porcupine Meatballs, Mashed potatoes, corn

Wednesday--Baked Garlic Chicken and salad

Thursday--Chili in crockpot and fritos(cornchips)

Friday--Camping--Hamburgers, bake beans and salad

Saturday--Taco Soup in crockpot

I've been sick with the flu and now a sinus infection.  We have been eating spaghetti, frozen pizza, and ordering out.  Not frugal.

We only do dinner because we both work full time and my son is out of the house.

Sunday - Peppercorn Ranch London Broil with roasted mixed potatoes

Monday - pasta salad with grilled chicken

Tuesday - hot dogs with spicy fries

Wednesday - creamy tomato soup with grilled cheese sammies 

Thursday - mini sliders with cheese and corn on the cob 

Friday - Pizza

Sat - out, we always go out to eat Sat nights.

Basically all it is is a peppercorn ranch marinade I get from Wegeman's and I just poke holes in the steak so the steak can soak up the marinade....I do it for at least 6 hrs....comes out really tender.  I broil it for 8 minutes on each side and then it's done....we like our steak med to med well...if you want med it would be 6 minutes on each side. 

The potatoes I get from the farmer's market...they have the mixed bags of the blue potatoes, red potatoes, gold potatoes and these other fingerling potatoes (the small ones that I only have to cut in half).....I use a mix of thyme, garlic salt, onion powder, sea salt, cracked pepper and rosemary.....drizzle with Olive Oil, mix together and rub on potatoes.....bake at 400 for like 30-40 minutes...turning once.

It's super easy and really yummy....

 Sweet and Sour Kielbasa

6 tablespoons butter

2 large onions, sliced

1 cup packed brown sugar

1/2 (28 ounce) bottle ketchup

3 tablespoons cider vinegar

1 1/2 teaspoons spicy brown mustard

1 tablespoon Worcestershire sauce

2 teaspoons hot pepper sauce

1 pound kielbasa sausage, cut into 1 inch pieces

Melt butter in a large skillet over medium heat. Saute onions until tender. Stir in brown sugar, ketchup, vinegar, mustard, Worcestershire sauce and pepper sauce. Simmer, stirring occasionally, for 20 minutes.

Place sausage in a slow cooker with the sauce and onions. Cook on low for 4 to 5 hours. The longer it simmers the better!  Makes a serving for 5.
