Frugalistas Frugalistas

After talking to my mom, we have decided to do at least one meal a week without meat. We are both fine with this and think its a good way to cut back some. However, I have no recipes... and I am leary of just picking one offline and going with it. So I wanted to know which ones yall have tried or use, just to give me somewhere to start.

Any suggestions? :)

Spaghetti. Instead of meat, add mushrooms, tomatoes, & bell peppers to bulk it out.

Veggie pasta

I like to use a whole eggplant, peeled and cut into cubes
Mushrooms (any kind), sliced
A bell bepper diced or in strips
Onion diced or in strips
one or two fresh tomatoes, diced

first cook the onion and bell pepper then add the other veggies, I add the mushrooms a little later. I cook it in olive oil and season with garlic salt and basil (sometimes I add parm cheese right into it). I let it cook until the tomatoes are broken down into sauce and the eggplant in really soft too.
I serve it over linguine pasta.

 

I have also cut onions and peppers into strips and cooked them with mushrooms and served that over pasta before too.

My husband likes fish, so sometimes I will cook him fish and then have a simple pasta on the side that will be my main meal, it's just spaghetti and peas seasoned with a little butter, garlic, salt and basil.

Chili

Two cans Kidney or black beans
One can great northern beans
One small can tomato paste
One can veggie broth
You can either use on pack of the chili seasoning or season with your own
Just mix all ingredients together in a pot and bring to a boil, cook until it thickens, add whatever toppings you usually like.

Cook onion until tender add carrots, cabbage, tomatoes and beans. You can use water for the broth and season well, or veggie broth or half water half broth, I just put in as much as I need to cover all the veggies plus a little more. I season with garlic, salt, basil and a little black pepper.
Bring to a hard boil then add the pasta and cook for 15 min or until pasta and veggies are done, then add the zucchini and cook until it is soft, about 5 min.

I like to make these when I get a good deal on the peppers, black beans would be good!
