Can you keep shredded, raw potatoes over night?

I'm making potatoes au gratin and accidentally set my food processor to shred instead of slice. Whoops! I don't want to waste the potatoes so, can I save them to make hash browns with in the morning? Do I need to keep them in water?

I think they would be fine if you kept them in water. maybe in water and in the fridge?

Thanks guys! I knew they'd need to be refridgerated, wasn't sure if I needed anything else.

Instead of making au gratin potatoes tonight make cheesy hashbrown casserole tonight if you're worried about saving them

If you really ring them out you can put them in a Ziploc bag.

I make shredded hashbrowns the night before all the time.

Soak them in cold water until the starch is gone. So soak, drain and repeat until the water is clear.

Drain and shake the colander.

Squeeze the potatoes in a dish towel and then I press them in my potato ricer to get rid of all the excess moisture.

Store in Ziploc bag in the refrigerator.

This is what I ended up doing. I was too tired to try to squeeze the water out, I just needed to get to bed. Cooking my hashbrowns now and while they dont look the best but they sure smell good!!

 I hate it when that happens.  Of course, that only happens to me when it was my last few potatoes.  LOL!
