I leave mine out (cut open) to dry a day. Then I just take chunks and use my cheese grater and store in a ziplock. I'm not sure how right that is, but I lived with a family from the Phillipines for awhile and that's what the mom would do just about every month. Everything she made tasted good - she even had a coconut crusted chicken that was AMAZING.

I would give the coconut away (I don't like coconut), put the vanilla beans in a small bottle with vodka to make homemade vanilla extract, cut up the bananas, pineapple, and mangos for fruit salad garnished with mint.  I don't know what I would do with the ginger.

I was just going to mention the vanilla extract. :)

That list screams for happy hour. Lol Blend with ice and add liquor or asweet red wine.

Punch two of the eyes out, pour the water, bake for 15 min, crack the shell to remove, put coconut meat in the food processor.

That's how I start every coconut.
