What would you do with.... - Updated - 4 recipes decided :)
1 whole coconut
3 vanilla beans
A bunch of bananas
2 small pineapples
3 mangos
Fresh ginger
I also have fresh mint
What would you make? Not necessarily with everything above in it but at least 2. I do not have an ice cream maker. I have 4 bananas I need to use soon for sure

Mang-licious Tilapia
Baked Coconut Shrimp
Tropical Quinoa Bars
Pineapple Fried Quinoa
I leave mine out (cut open) to dry a day. Then I just take chunks and use my cheese grater and store in a ziplock. I'm not sure how right that is, but I lived with a family from the Phillipines for awhile and that's what the mom would do just about every month. Everything she made tasted good - she even had a coconut crusted chicken that was AMAZING.

I would give the coconut away (I don't like coconut), put the vanilla beans in a small bottle with vodka to make homemade vanilla extract, cut up the bananas, pineapple, and mangos for fruit salad garnished with mint. I don't know what I would do with the ginger.
