Can you share your recipes for the granola bars and the cheesy quinoa cakes?

Granola Bars

Just tried this one and, they're very good!

dinner - crockpot beef stew, grain-free butter biscuits

 

Friday:

breakfast – poached eggs, veggie hash, veggie juice

lunch – tuna melts, salad

dinner - crockpot island chicken, salad

Again the chicken recipe please lol! 

Saturday:

breakfast – FFY

lunch – bratwurst, side salad or veggie sticks

dinner - pizza frittata, salad

I had a lot come up and didn't make it in the crockpot, but here's the recipe I was going to follow...and it made up in less than 30 minutes in the skillet.


Mccormick Tuscan Chicken Stew

"this is from mccormicks little recipe packets."

Ingredients

    • 1/2 teaspoon fennel seed
    • 1 teaspoon basil leaves
    • 1 teaspoon minced garlic
    • 1 teaspoon crushed rosemary
    • 1/2 teaspoon oregano leaves
    • 1/2 teaspoon fresh coarse ground black pepper
    • 2 tablespoons olive oil
    • 1 1/2 lbs chicken breasts, cut into 1 inch cubes
    • 1 medium onion, cut into 1/2inch thick wedges
    • 15 ounces cannellini beans
    • 14 1/2 ounces diced tomatoes, undrained
    • 1/4 cup red wine or 1/4 cup water
    • 1 teaspoon salt
    • 6 ounces baby spinach

Directions

  1. heat oil in large skillet on med-high heat. add chicken; cook and stir 10 minutes or until browned. remove chicken from skillet. add onion and fennel seed; cook and sir on medium heat 5 minutes or until tender.
  2. stir in beans, tomatoes, red wine, remaining spices, and salt. bring to boil, sirring frequently. reduce heat to low; cover and simmer 5 minutes. return chicken to skillet.
  3. stir in spinach. cover. cook 5 minutes longer or until spinach is wilted

Island Crockpot Chicken

  • 8 oz. pineapple slices in syrup
  • 2 lb. chicken parts
  • 10 1/2 oz. can chicken broth
  • 1/4 c. vinegar
  • 2 Tbsp. brown sugar
  • 2 tsp. soy sauce
  • 1 garlic clove, minced
  • 1 green pepper, cubed
  • 3 Tbsp. cornstarch
  • 1/4 c. water

Drain pineapple and reserve liquid.  Put chicken parts in bottom of crockpot. 

Mix together pineapple syrup, chicken broth, vinegar, brown sugar, and soy sauce in a saucepan.  Heat until brown sugar dissolves.  Pour over chicken.  Cover and heat on high for an hour.  Add pineapple, garlic, and green pepper.  Cover and cook on low for 7 to 9 hours. 

Half an hour before serving mix together cornstarch and water and add to the crockpot.
