No bake peanut butter oatmeal cookies

Dh had been posting recipes on my Facebook.  This one looked good.  Not sure how much oatmeal I have on hand.  But might try this later.  If not enough oatmeal on hand. I will be going to the store with a friend tomorrow. I can get some more. This seems very simple to do.  Other than the sugar and cocoa.  This looks like a healthy cookie.  I can make some with the chocolate drizzles and some without.  Me don't eat Chocolate. But dh likes it.  It says if desired drizzle with the cocoa powder sugar mix.  That sounds optional The below link is the link to something Facebook for recipe share.  Lots of nice recipes there.  I did do the one they had of this taco pizza thing with the crescent rolls in the tube.  It came out good.  I seen this one for Strawberry Pretzle salad.  I remember this one with peach. I remember having to make it when I cooked at the retirement home.  It was called Peach Pretzel Dessert.  Had similar ingredients as the strawberry one I just seen.

No-Bake Peanut Butter Oatmeal Cookies
2 cups sugar
Dash of salt
1 stick butter (1/2 cup)
1/2 cup milk
1 cup peanut butter
1 teaspoon vanilla
3 cups oatmeal
Waxed paper

In a large saucepan bring to a boil the sugar, salt, butter and milk. Boil mixture over medium heat for 1 full minute. Remove from heat immediately.

Add peanut butter and vanilla; stir well. Add oatmeal and stir until thoroughly incorporated. On a sheet of waxed paper, drop mixture by the teaspoonfuls. Drizzle with a mixture of cocoa, powdered sugar and water if desired. Cool until set and firm

Not sure if these cookies freeze well for later use. I was thinking.  I  bake for the meal program that feeds the poor at church.  I try keeping my desserts reasonably healthy.  Like making fruit muffins or other dessert things that don't have a lot of artificial or processed stuff.  Figuring this might be the only meal some people get for the day.  They should get something healthy.

My mom made these all the time. We called them peanut butter delights.
