Probably tater tot casserole. Beef, tater tots, and I make the cream of chicken soup for pennies.

Probably chicken & noodles.  With chicken on sale @ .98/lb and making my own pasta, it's pretty darned cheap for a big pot.

when my garden is going a big salad with some hard boiled eggs is a really cheap go to for us.

My chickens free range in the summer and i don't supplement feed for them then so my eggs don't cost too much

Really hard to say. Could be herbed lentils over rice, but strata comes in pretty close as well, especially if we get free day old bread. Leftover soup is another one (all the leftover bits and pieces go into a freezer container, when it's full I make soup). Cabbage soup (cabbage, homemade from homegrown tomato sauce, broth from buillion over some rice).

When the garden's going, chef salad is the cheapest meal for us.  I often use leftover meat or hard boiled eggs for the protein, and the veggies are free from my garden.

Homemade pasta sauce (I make it in bulk and freeze enough for several meals).
Tomato soup & grilled cheese
Tuna casserole
Chicken & rice

Rice and beans is actually a favorite meal in my house. I increase the price by adding sausage and cheese, but it is still super cheap.

I think my white chicken chili is another cheap one, just because it ends up making about 3 night's worth of meals from one pot.
