I made my version of Osso Buco. Served it over cheesy polenta(well used grits which is white corn) and green beans. The meat looked like expensive Osso Buco to start with. But was meat intended to be browned off and turned into soup or soup stock. Meat that was much much cheaper than the more expensive meat. I turned it into a really fancy meal. Like the culinary students at the college I work at make. Just removed the bone when serving. It came out really good. I have some leftovers for another meal.
