I'm a crockpot lover! And with it already being so hot I have been using it more and more but I'm running out of recipe ideas! Pinterest has a lot of the same things repeated through and hasn't been a lot of help. I need simple, easy, and frugal crockpot recipes that don't require a lot of prep and possibly are an all in one meal (no needing to cook a side). I'd also love ones that are freezable! I do a big grocery trip month for my meat and will be doing a freezer cooking day the day after since hub you will be home to help with my 13 mo old. Thanks in advance!!!!

Crock pot Salsa Chicken

  • 4 to 6 chicken breasts
  • 32 oz. salsa (2 16 oz. jars)
  • 1 15 oz. can corn, drained
  • 1 16 oz. can black beans, drained and rinsed

Lay chicken pieces in bottom of crock pot. Top with rest of ingredients. Cover and cook on low for 6 to 8 hours until chicken is done. Serve with rice, or with flour tortillas, sour cream, black olives, tortilla chips, etc.

Crock Pot Potatoes & Ham

  • 6 to 9 medium potatoes, sliced
  • 1/2 to 1 lb. ham, cut into slices or chunks
  • 1 medium onion, sliced
  • 1 can cream of mushroom soup
  • 1 c. shredded cheddar cheese

Layer potatoes, ham, onion, and cheese in crockpot. Repeat. Top with cream of mushroom soup. Cover and cook on low for 6 to 8 hours until potatoes are tender.
NOTE: Watch your crock pot carefully! Mine will cook this recipe in less than 6 hours on low.

I personally found this a bit bland.  Feel free to adjust seasonings to taste.

Wild Rice & Beef Crock Pot Casserole

  • 1 c. uncooked wild rice, rinsed and drained
  • 1 c. chopped celery
  • 1 c. chopped carrots
  • 2 4 oz. cans mushroom pieces, drained
  • 1 large onion, chopped
  • 1 garlic clove, minced
  • 3 beef bouillon cubes
  • 2 lb. boneless round steak (I found chuck steak was cheaper), cut into 1 inch cubes
  • 3 c. water

Place ingredients in crock pot in the order listed. Do not stir. Cover and cook on low for 6 to 8 hours or until rice is tender. Stir before serving.

Crockpot Pizza

1 lb. ground beef

16 oz. pkg. rigatoni pasta, cooked (or any other macaroni)

15 oz. can pizza sauce

16 oz. mozzarella or pizza blend shredded cheese

12 oz. pepperoni

Brown the round beef in a skillet on the stovetop.  Drain well and cobine the beef with pizza sauce and 1 c. cheese.

Layer in crockpot:  macaroni, ground beef in sauce, pepperoni, and rest of cheese.  Cover and cook on low for 7 to 8 hours.

Taco soup

  • 1 28 oz. can diced tomatoes
  • 1 10 oz can Rotel tomatoes and diced chilies
  • 1 cup sweet corn kernels
  • 2 cans pinto beans or 1 lb. ground beef
  • 1 pkt. taco seasoning
  • 1 pkt. ranch dressing mix

Mix all together, cook it in your crock pot for 4 hours on low.

This also works well with chicken breasts instead of chops.

Crockpot Pork Chops & Rice

4 pork chops

1 c. uncooked long grain rice

1 envelopes onion soup mix

1 can cream of mushroom soup

2 c. water

Pour rice into crockpot.  Sprinkle with 1/3 onion soup mix. Place pork chops over rice.  Pour mushroom soup over all.  Sprinkle remaining onion soup mix over soup.  Add water.  Cook on low for 8 to 10 hours.

Serves 4

Serve over rice, which can be pre-cooked and frozen for your convenience.


Slow Cooker Pepper Steak

  • 3 lb. beef steak (sirloin or round) cut into strips
  • 1 Tbsp. minced garlic
  • 1 medium onion, chopped
  • 1/2 c. soy sauce
  • 2 tsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. ground ginger
  • 1/2 tsp. black pepper
  • 2 large or 3 medium bell peppers (mix of green and red or just green), cut into strips
  • 1/4 c. cold water

1 Tbsp. cornstarch

hot cooked rice

Place steak, garlic, onion, soy sauce, sugar, salt, ginger and black pepper in crockpot.  Cover and cook on low for 8 to 9 hours.

Add pepper strips during the last hour of cooking.  Blend water and cornstarch until smooth, stir into crockpot.  Cook on high until thickened.  Serve over rice.

Crock Pot Sausage and Peppers

About This Recipe

"This is a very easy recipe I found and tastes yummy! I serve it with french bread, or rice to soak up the juices. Enjoy!"

Ingredients

    • 2 -3 lbs mild Italian sausage
    • 2 (14 ounce) cans stewed tomatoes
    • 1 (24 ounce) jars spaghetti sauce ( I use Prego Traditional, but you can use your favorite)
    • 3 -4 bell peppers, sliced ( red, orange, yellow)
    • 1 onions, sliced

Directions

  1. Place onions and peppers, then sausage in crock pot. Pour the stewed tomatoes on top of the sausage, then the spaghetti sauce. Sometimes I add a touch of water to make more sauce.
  2. Cook in crock pot for 6-8 hours on low, 3-4 hours on high.

Ingredients

    • 1 lb ground beef, cooked and drained
    • 2 (15 ounce) cans hot chili beans, undrained
    • 2 large green peppers, chopped
    • 1 large onions, chopped
    • 4 celery ribs, chopped
    • 1 (8 ounce) cans tomato sauce
    • 1 teaspoon chili seasoning mix
    • 2 garlic cloves, minced
    • 7 ounces elbow macaroni, cooked and drained
    • salt and pepper

Directions

  1. In slow cooker, combine first 8 ingredients and mix well.
  2. Cover and cook on LOW heat for 6 hours or til heated through.
  3. Stir in macaroni and mix well.
  4. Season to taste.

About This Recipe

"This is my own recipe and a family favorite. We take it camping and enjoy taking it to pot lucks as well. Hope you have all found a new family favorite of you own enjoy seeing your variations."

Ingredients

    Crust

    • 1 1/2 cups biscuit mix or 1 1/2 cups Bisquick, clone
    • 1/2-3/4 cup water ( Enough to make drop dumplings or form a sticky ball)

    Sauce and Toppings

    • 1 (16 ounce) jars pizza sauce or 2 cups , homemade sauce
    • 1 -2 cup mozzarella cheese, depending on how much cheese you like
    • pizza toppings, of your choice ( precook and drain any raw meats)
    • 2 tablespoons olive oil

Directions

  1. Drizzle olive oil on the bottom of the crock then put about one quarter of your pizza sauce on the bottom of the crock. Mix up your crust and spread on top of the sauce to almost touch the sides then cover with the remaining sauce and coat it all over so it sort of swims in the sauce like a giant soft dumpling. Top with cheese and your chosen meat and veggies cover and cook on high for about 2 hours. Enjoy!
