No. But I want to. Hard to find a whole foods jam recipe that doesn't call for sugar or pectin.

I think you mean Perserves (Jams and Jellies and other canned items)  Preservatives are things you do NOT want in your food (chemicals used to make food last longer)

Yes.  Canned 7 quarts of beans yesterday and plan to make pickled beets today.

Just curious why you would want to avoid pectin?  My understanding is this is a natural occurring fiber from citrus or apple fruit.  Little nutritional value but good for your digestion and helps to thicken the fruit preserves.

I make fig preserves, they don't need much sugar.  I do add pectin and a bit of lemon peel.  I freeze them rather then can.
