February 1 - 7, 2015



fend for yourself breakfasts...grain-free chunky monkey muffins, grain-free chocolate zucchini muffins, veggie omelets, sausage gravy over hash browns, veggie juice to drink


lunches....leftovers, sausage & veggie soup, egg salad, tuna salad, tuna patties w/side salad


Sunday:

dinner – Super Bowl! Veggie pizza appetizers, deviled eggs, buffalo chicken cheese dip & chips, chili, grain-free brownies


Monday:

dinner – spicy roast chicken, oven fries, green beans, salad


Tuesday:

dinner – tacos


Wednesday:

dinner – egg bake w/breakfast sausage, steamed broccoli & carrots


Thursday:

dinner – crock pot cauliflower soup, sausage pigs in a blanket


Friday:

dinner – Tuscan chicken stew, Italian salad


Saturday:

dinner – pizza, salad

I'm going to try to get back to menu planning so I'm not in the grocery store as much. Even though I enjoy going, I have a stocked pantry and overbuy. So here's my plan for most of the week:
Sunday: drumsticks, burgers in buns, guacamole, chips, and coleslaw
Monday: stew, carrots and potatoes
Tuesday: Asian chicken breasts, rice, and broccoli
Wednesday: turkey meatloaf, spaghetti, and broccoli
Thursday: steak, smashed potatoes, and salad
Friday: Greek chicken breasts, pasta, and cauliflower

Low Carb Crockpot Cauliflower Soup:

Ingredients:
1 head cauliflower - cut into small pieces, uncooked
1 green pepper - diced
1 small yellow onion - diced
1 clove minced garlic
3 1/2 cups chicken broth
3 tbsp butter
1 cup heavy whipping cream
4 slices bacon
pepper to taste
2 tsp parsley

Cook bacon on stovetop until crisp. Slice into small pieces and add all ingredients into crockpot. I took the cauliflower and put it into my ninja food processor, chopping it up really fine and taking the work of chopping out for me. This is the best part, take the grease from the bacon and add that to the crockpot as well! Cook on low for 6 hours.

This meal could also be kept in the freezer, so make extra and freeze some for later!

No real plan. We got hit by the storm and even with 4wheel drive the roads are hard to drive. So I'll be experimenting with what I have

 pork roast with potatoes, carrots and onions

something with hamburger

and the next day is grocery day cause thats when all the sales start.

On my menu:

Sunday was spicy buffalo style roasted cauliflower, veggie whole wheat pizza (had peppers, onions, mushrooms and spinach with parm and motz) and cucumber chips with roasted red pepper humus.

Monday: pulled pork tacos with calantro lime rice.

Tuesday: roasted chicken, steamed broccoli and corn casserole.

Wednesday: potato soup with crusty garlic bread and salad.

Thursday: Breakfast For dinner (sausage biscuit casserole).

Friday: sloppy Joe's (made with ground turkey) served with a side of sweet potato fries.

Saturday is grocery shopping day.

Monday- meatloaf, mashed potatoes and veggies

Tuesday- crockpot creamy Italian chicken, egg noodles, veggies

Wednesday- baked spaghetti? Maybe something else

Thursday- sausages and macaroni, veggies

Friday- nuggets and macaroni- quick dinner were going to the circus

Saturday... Roast Chicken

I have green smoothies for breakfast, kids usually have organic cereal, or yogurt and a muffin.

Lunch is leftovers.

I have 1 extremely finicky eater so aside from cooked vegetables (he only eats canned wax beans!?!?) we always have at least 1 fresh vegetable- cucumbers, carrots or peppers and canned or fresh fruit.

Wed-Pork Roast with roasted veggies, taters

Thurs- Leftover Pork Casserole, Rolls, veggies

I am horrible when it comes to the weekends, because I have no idea what everyone's plans are.
