So far I only have two days.

Monday: Stir fried vegetables with grilled whiting (freebie as my Dad caught it) and roti bread
Tuesday: Homemade pizzas

Wednesday I'm doing my half-yearly big Costco trip where I buy a lot of bulk meats to freeze, one package of bacon and the fish my Dad caught is the only meat I have left in the freezer- there's enough for about four dinners in there, but I'm pretty sure we don't want fish four days in a row (well, DD probably would, but DH and I would get sick of it), so I will make a decision about the rest of the week after I see what Costco have to offer this time around.

To add in the rest of the week.

Wednesday: Lamb shanks with mashed potato, roasted pattypan squash and broccoli
Thursday: Spaghetti bolognaise (I make my sauce with a mixture of 60% beef and 40% eggplant) with a side salad
Friday: Chicken and red pepper kebabs with a barley, parsley and tomato salad.

I ended up buying a whole side of lamb from Costco, I portioned it all up to freeze today and it will last 18 meals, making it $3.06 per serve. I'm pretty chuffed about that one.
