Sugar/Dairy/Gluten/EGG- Free cookies that are the bomb. (my recipe)
I just tried my first batch of gluten-free almond flour sugar cookies, with no egg and no sugar. :o
So, here's the basic gist of the recipe, I sorta winged it. (which was brave for me, I suck in the kitchen)
1/4 tsp salt.
1/3rd cup butter or coconut oil. (or vegetable or corn oil, whatever you got on hand.)
1/3rd cup cup honey.
one package 8oz almond flour.
Stir until it's all wet, if needed, add tiny amount of water until it clumps together and doesn't fall apart.
Optional add ins: nutmug, vanilla extract, cinnamon, nuts, or chocolate chips.
Heat oven to 350. cook 8-10 minutes on a pan. makes 15 cookies.
Tip on cooking them - they cook however you choose to shape them, so make sure if you want them round and flat, you flatten them with a fork or you'll end up with a ball or square of whatever shape you put them on the pan.
bring out of oven, let cook, frost if you want, stick on plate, put in fridge (for an hour) or freezer for 10-15 minutes, then eat. :)
- they are slightly gritty in texture from the almond flour, but i kinda like it, it's a neat explosion of tastes/texture in my mouth that's not offensive. LOL

Thanks-I'm also allergic to eggs. Always looking for good recipes. We haven't tried almond flour yet
I would love to share egg free recipes with you sometime.
im really bad with cooking from scratch... but these were sooo easy to make. I googled about 30 different recipes, got the gist of how to make cookies, then made up a recipe with what I had on hand in a logical fashion that made mathamatical sense to make it work.
they tasted great.
Now, if everything else I tried to cook would come out that well....
I seriously have ruined mac and cheese to the point where my dogs wouldn't eat it.

Sounds good! But I have to admit I'm an out of the box cook/baker lol. I used to make the GFCF cookies from Betty crocker. They were pretty good. They need eggs though :/

Not the most flattering picture, but these are how they turned out for me. LOL they were delicious. :P
Quoting jordiesmom05:Sounds delicious! I will have to try them. Jordan would love the cinnamon added in it.
