I'm trying to decide on a style of skirt for me. I like knee-length. I'm plus size, so it would be great to have a design with bigger measurements.
I am an intermediate sewer, I think, though I am still learning some of the lingo and techniques. I'm thinking a panel skirt would be good, but maybe there's a better style out there?

2 yards won't be enough to make a maxi skirt for you and a skirt for your daughter. The pattern you like is a gathered full length skirt. So to know roughly what you need in fabric, you would take at least 2 x your hip measurement, then figure the length. If you take the measurement across the fabric that will be your circumference, then you need your length. I wear an 18 and I would need 80" around (preshrunk) and 40" long. So overall I would need 2 X the 42" width fabric by 40" long = so 80" so 21/4 yards. Then you would want a bit more to insure you had enough for the waistband.
Here's a pattern that appears easy to make.
