 What are some of your quick and easy weeknight dinners?  With DD playing on two different softball teams we are getting home pretty late 3 out of 5 nights a week.  I'm looking for some new ideas!

Chili





2 lbs. Hamburger

1 Onion (chopped)

1 Tbs. seasoning salt (Lawry's etc.)



Add all and brown hamburger (Do Not Drain)



Add:

1/4 C. Sugar

1 can chili beans

1 can kidney beans

1 can refried beans (to thicken up a little)

1 sm. can tomato sauce

1 pkg. McCormicks HOT chili seasoning (mild or medium if you perfer)

1 Large can tomato juice



Mix all together and cook till hot!

Cream Cheese Chicken *crock pot*





4 boneless chicken breasts

2 tablespoons melted butter

1 pkg. dry italian salad dressing

1 can cream of chicken soup

8 ounces cream cheese

1/3 Cup of chicken broth





pour chicken broth in bottom of crock pot, then add the chicken. drizzle melted butter over chicken and sprinkle with dry italian dressing. add pepper to taste.



Cook low 6 hours (it was done in 5 hrs in my crock). 45 minutes before done, mix soup and cream cheese (i melt in microwave for a few minutes to combine until smooth). add mixture to crock pot and continue cooking on low for 30-45 minutes.



i serve this over egg noodles.

 Not super quick, but doesn't take too long.

Yogurt Chicken



1 stick margarine



skinless chicken breasts or thighs



1 large container plain yogurt



Saltine cracker crumbs



Melt margarine in microwavable bowl. Coat chicken with yogurt, roll in cracker crumbs, then coat with melted margarine. Bake in preheated 425 degree oven for 35-40 minutes on a shallow sheet pan.

Anything in the crockpot!~ Roasted chicken, pot roasts, carnitas, corned bee, soups

Another fave is enchilladas, I can prep it ahead of time and then just have to throw it in to warm it up.

 Forgot to add that I shred my chicken breast and mix it up with everything else in the crock pot when it's done, then serve it with the egg noddles. So we eat it as a pasta meal, very good!

(you could add veggies to it as well if you wanted, like celery and carrots, etc.)

I like BBQ pork sandwiches which I make in crockpot and fiesta chicken. Also spaghetti, tacos and burritos are quick fixes

Frozen meals

I feel you on the late nights. My husband umpires so we are at the ball park 5 nights a week.
