OT: Christmas Dinner help

I decided to do an herb crusted roast beef for Christmas Dinner. My problem is I cannot decided which potatoes to make. What sounds best to you?

Bacon and Chive Potato Pancakes
Mashed Potatoes
Blue Cheese Stuffed Potato Croquettes
Baked Potatoes
Twice Baked Potatoes

Other sides are a mesulin salad, creamed corn , homemade rolls, and honey ginger glazed carrots.

 It would depend on the timing of the potatoes and beef I guess...I always forget that my oven will be occupied, so baked potatoes are out! The bacon and chive pancakes sound delicious though.

 You could do fully loaded mashed potatoes which are mashed potatoes with all the stuff you put on baked potatoes mixed in to them. We love them here.

 Twice baked potatoes are always a hit with everyone, kids and grandparents.  However the blue cheese stuffed croquettes sound awesome with the roast beef.  So I guess I'm not much help lol.
