If we do anything educational on weekends can I count that as a day of work? Say we missed a few days and wanted to catch up on the weekends or went on a camping trip etc could I count that as one of our required 180 days?

I would...document what you did and what subjects apply and go for it.

I count Boy Scout camp outs for PE and sometimes science or other subjects depending on what we do.

I planned on documenting the weekends anyways. Just in case. But mainly like if we caught up on everyday work (language arts, math, science etc) just didn't know if they only expect us to work Monday thru Friday like ps lol

We are not required to keep track of days in my state but if we did I would count every single day that I could even if all we did that day was take a walk (nature study/science) or cooked (home economics).
