I'm thinking tonight is a Chicken and Dumplings kind of night..just can't figure out what to have with it.

It's a fast food restraunt........my DH is so sad that there are none of these in our state.  We have to go to Toledo if we want some.  :(

It really depends on my mood.  I usually start with either a whole chicken, or 2-3 leg and thigh quarters. Boil them in a big stock pot with celery, onions and carrots.  Let it cook until the chicken is almost falling off the bone.  Get the chicken out, debone it all..save the broth, but strain it. I usually shred the chicken, toss it back in the broth, then toss some of the broth and cornstarch in a blender, add it back to the pot.  Make up a double batch of drop dumplings, cover it and let it cook another 15-25 minutes.  Sometimes I leave the veggies in, sometimes I take em out.
