 Write everything & have your oldest be your vice! Or if you have a tablet there are apps that will speak what you type!

Just have them do the subjects that need little instruction, for us it would be science, history, reading, cursive...then put some documentaries on the tv.

I have really bad allergies so I often lose my voice, I understand how frustrating it can be, lol
