Books, DVD player, toys in a bag near them, stop at rest stops and let them get out and stretch their legs, snacks.

We bring lots of books. We also have toys for the little ones and my 9 yo brings her ipod touch. My 9 yo also has a laptop that they can watch movies on.

Oh yeah.. we also have the ABC game. Where we have to spot letters on different signs to get from A to Z. Keeps them occupied for hours.
