You know how Girl Scouts Thin Mints cookies taste better out of the freezer? Well, this Frozen Mint Oreo Pie is like that, only a thousand times better.
There's the great chocolate and mint combination, but when you add an Oreo crust and a creamy, gooey filling into the mix, it's simply irresistible. This recipe from Life as a Lofthouse is simple and perfect to serve on those hot summer nights. It's also a great one to make ahead of time and just pull from the freezer when it's time to eat.
Frozen Mint Oreo Pie
2 cups crushed Oreo cookies
1/4 cup butter, melted
7 oz jar Marshmallow Fluff
1/8 cup milk
2 drops (1/2 tsp) peppermint extract
3-4 drops green food coloring
1 cup whipping cream, whipped
Combine cookie crumbs and butter together (reserving 1/8 cup of Oreos for topping). Press into a 9-inch pie plate.
Start beating your whipping cream in a large bowl with a hand mixer. Beat on high for at least 5-8 minutes or until it is fluffy and thick.
In a separate large bowl combine marshmallow fluff and milk. Mix well.
Blend in peppermint extract and food coloring. Fold in the whipped cream.
Spread on top of the Oreo crust. Top with remaining cookie crumbs. Wrap in plastic wrap and freeze overnight!
