Heartland Pork Stew from the Betty Crocker site!

Heartland Pork Stew

You Need:

2
pounds pork boneless shoulder, cut into 1-inch pieces
1/2
teaspoon salt
1/4
teaspoon pepper
1
tablespoon vegetable oil
2
medium dark-orange sweet potatoes, peeled and cut into 2-inch pieces
1
package (9 ounces) Green Giant® frozen baby lima beans
1 3/4
cups Progresso® chicken broth (from 32-ounce carton)
1/2
teaspoon salt
1/2
teaspoon dried thyme leaves
1/4
teaspoon dried sage leaves
1/4
cup water
2
tablespoons cornstarch

To Make:

  • 1Sprinkle pork with 1/2 teaspoon salt and the pepper. Heat oil in 12-inch skillet over medium-high heat. Cook half of the pork in oil 5 to 8 minutes, stirring occasionally, until pork is brown; place in 3- to 4-quart slow cooker. Repeat with remaining pork.
  • 2Add sweet potatoes, frozen lima beans, broth, 1/2 teaspoon salt, the thyme and sage to pork in cooker.
  • 3Cover and cook on Low heat setting 7 to 8 hours.
  • 4Stir together water and cornstarch; stir into pork mixture. Increase heat setting to High. Cover and cook about 15 minutes or until mixture is thickened.

Tips:

Those who shy away from lima beans may like their subtle flavor in this hearty stew. If you prefer, you can substitute butter beans or sweet soybeans.

To ensure even cooking, be sure to cut the pork into pieces of the same size.

The pork and sweet potatoes can be cut the night before, wrapped separately in plastic wrap or plastic food-storage bags and refrigerated.

Baked Turkey Hoagie from the Pillsbury site!

Baked Turkey Hoagie

You Need:

1
loaf (1 lb) unsliced French bread, cut in half horizontally
1
can (18 oz) Progresso™ Recipe Starters™ creamy three cheese cooking sauce
4
teaspoons spicy brown mustard
3
cups shredded cooked turkey
1
medium red bell pepper, cut into rings
1
medium green bell pepper, cut into rings
6
slices (1 1/2 oz each) Cheddar or Swiss cheese

To Make:

  • 1Heat oven to 375°F. Place bread on piece of heavy-duty aluminum foil (28 to 30 inches long) on large ungreased cookie sheet.
  • 2In medium bowl, beat 1 cup of the cooking sauce and the mustard with whisk until smooth. (Reserve remaining cooking sauce.) Stir in turkey until well mixed. Top bottom half of bread evenly with turkey mixture. Alternate red and green bell pepper rings over turkey mixture; top evenly with cheese. Place top of bread on top. Wrap loaf loosely in foil.
  • 3Bake 25 to 30 minutes or until cheese is melted and sandwich is thoroughly heated. Heat remaining cooking sauce until hot; serve as dipping sauce as desired.

Tips:

This hearty sandwich is great for a family dinner or for a casual get-together with friends. The outside of the bread gets crispy, and the filling is hot and melty good.
