Found this recipe and had to share...

 Mini Deep Dish Pizzas

Ingredients:

Pillsbury Pizza Crust

olive oil

spinach

artichoke

cream cheese

pesto

 

Cut the crust in little squares and put into a muffin pan, set aside.  In a pan heat up some olive oil and add spinach until it begins to wilt, then add artichokes, cream cheese and pesto. Stir until the cheese has melted and its creamy.

Next fill each dough cup with the filling and put in the oven for about 10 min.

Easy :)

Use grape seed oil instead of olive oil.  When cooked, olive oil goes rancid and loses any good stuff.  Grape seed oil has a much higher smoking point and therefore does not go rancid when cooked.  :)  But looks yummy.  Maybe I can do a gluten free version some time or another.

 great idea.. yes i heard of the olive oil becoming rancid.. thanks :)
