Pumpkin pie for breakfast on the Friday after Thanksgiving?

Is it just me? Me and my mom share this ritual to prior to heading out for Black Friday Shopping, lol.

I love pizza for breakfast. I can't eat pumpkin pie but I eat apple pie for breakfast. There's really not much difference in apple pie and an apple turnover.

I often make pumpkin custard (pie w/o the crust) for breakfast here.  LOL  It's yummy and healthy (I use 1/2 of the sugar called for in the traditional recipe) and a treat!

Oh, and I've eaten salad for breakfast.  I put eggs,bacon or ham, any veggie you'd put in an omelet, some cheese, and some people add French toast croutons.

Pumpkin Custard (as I make it)

  • 3 slightly beaten eggs
  • 6 Tbsp. honey
  • 2 to 3 tsp. pumpkin pie spice
  • 1/2 tsp. salt
  • 1 1/2 c. cooked or canned pumpkin
  • 1 c. evaporated milk

Mix the ingredients together in order given. Pour into 9 inch greased pie plate and bake in 400 degree oven 45 to 50 minutes or until set.

That's my girl, lol..... I think pumpkin pie is one of my most favorite desserts, so good cold with a dallop of cool whip =)
