We're having leftovers, if we don't go out to eat.  DD has had the flu.  We're waiting to see if she's over it or not, today.  So far, she's doing well.

What's your recipe?  We re-introduced tomato into DS's diet this week.  If he doesn't get sick within the next couple days, i can try making pizza!!!

Almond Flour Pizza Crust

  • 2 c. almond flour
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  • 2 eggs
  • 1 Tbsp. olive oil
  • 3/4 - 1 c. mozz cheese or Italian cheese mix

Preheat oven to 350°.  In a large bowl whisk together almond flour, garlic powder, salt, and baking soda.  In another bowl whisk eggs and olive oil together, then stir into the almond flour mixture.  Add cheese and work it in with your hands until well mixed.  Spread dough on a greased pizza pan and bake for 10 minutes.

Remove crust, top with your favorite toppings, and bake for another 12 to 15 minutes until cheese in the toppings is melted and bubbling.

Do you think it will work without the cheeses?  DS's not ready for dairy, yet.

I've never made it without cheese but You could try it.  If it's too wet, maybe add a bit more almond flour.
