Our family loves mashed potatoes, but in the heat of the summer, who really wants to boil a big old pot of water, slave over the sink peeling, cutting and then ultimately mashing? I’m getting overheated just thinking about it.
So, when in times of extreme heat (a.k.a. June-September and sometimes October), we use the good old-fashioned instant mashed potatoes instead. I’ve found that the Betty Crocker brand of mashed potatoes are best, because they really have a variety to choose from that can go well with really anything else you are cooking.
For instance, last night I grilled some grilled chicken. Nothing fancy, just a little olive oil and seasoning but, it came out great. Got a green salad together then went to making the potatoes. I tried the roasted garlic flavored pouches (three in a box so good for two plus meals), and within minutes I had a great heaping sauce pan of my family’s favorite side dish. Yum!
