I usually cook up some white rice while in a seperate pan I scramble up a couple of eggs, remove from pan and add veggies (frozen carrots & peas usually) and cook until softened. Add the rice and some soy sauce to taste, then add the eggs back in.
I've used this with chicken & with shrimp and both are delicious.

This is pretty much what I do, but I add diced green onions, ginger and just a little pinch of crushed red pepper flakes.
I cook my rice & set it aside. Then I sautee onions & sesame seeds in some butter, then I add my eggs & scramble them up, once those are cooked I add my other veggies (I like to use zuccinni), then I add the rice back into it. I add some garlic powder, soy sauce, ginger, curry & paprika. Mix it all up.
