Turkey, turkey, turkey. Wondering what to do with all the leftovers? If you're lucky enough to still have some, you better use them soon! I was lucky enough to have these delicious taquitos made for me, by husband, after a long morning of Black Friday shopping. Perhaps that is why they tasted extra good! And to tell you the truth, I can't remember when I've had a better morning. I'm a sucker for great deals, and good food.
Here's how you make them. Chop turkey breast into cubes. If you prefer, you can shred it instead. Warm the flour tortillas on the stovetop. Spread a small amount of mashed potatoes on to the tortilla. Then add the turkey. Season with salt and pepper. If you're adventurous, add a little bit of pepper jack cheese. Roll up and secure with a toothpick. Fry in a shallow pan using vegetable oil. Cook until golden brown. Serve with sliced avocados and salsa.
One taste and you'll want to cook these year round.
