
They always say that breakfast is the most important meal of the day, but in my humble opinion, I'd like to think that dinner is pretty important too. In our house, it's a chance to reconnect and catch up on each other's lives and have important discussions about upcoming events and family plans. No time is this more true than when school is in session for the kids. While schedules are definitely hectic, dinnertime allows us to check in with each other. And, most importantly, it allows me to make sure that our family has at least one well-rounded meal that day.
In an effort to make this easy for everyone, I've started to make a list of everyone's favorite sides and main courses and incorporate them through out the month, so my family feels like they have an active part in choosing what's for dinner. This way they're more likely to eat it, and it's been working. Here are a few of our ideas:
Baked Potatoes and Rosemary Chicken with a Green Salad
Potato Tacos with Fresh Pico de Gallo (Just fill shells with fried potatoes and onion mixture. Trust me, it's delicious, especially with a sprinkle of fajita seasoning).
Whole Wheat Penne Pasta and Grilled Chicken with Heirloom Tomatoes and Feta
Roast Beef, Sweet Potato Mash and Steamed Broccolini
Moms, what are your go to meals for healthful weeknight dinners?
yum, potato tacos sound good...... We make a lot of tacos, chicken and pork chops here
Spaghetti is our go to meal, it's fast,taste good and keeps them full!
The quesadilla sounds good!

We did a quesadilla that was hamburger, onion and potatoes, seasoned and then added cheese and cooked everything on our griddle. It came out awesome! But we like slow cooking dinners. Put a meat an some veggies in the slow cooker and maybe cook up some pasta with it or some rice.
