Gluten Free Idea - Old Fashioned Potato Salad

More and more I find myself having the need to make gluten free sides and meals for family and friends. I never mind, because I love a challenge - especially in the kitchen. Potatoes are a helpful tool in this task. The following old-fashioned potato salad recipe is a great gluten free side for roasted chicken, grilled hamburger patties, or turkey wraps (in corn tortillas of course).

6 medium potatoes, peeled (2 pounds)

1 1/2 cups mayonnaise or salad dressing

1 tablespoon white or cider vinegar

1 tablespoon yellow mustard

1 teaspoon salt

1/4 teaspoon pepper

1 medium onion, chopped (1/2 cup)

2 medium celery stalks, chopped (1 cup)

4 hard-cooked eggs, chopped

 

  1. Heat 1 inch water (salted if desired) to boiling in 3-quart saucepan. Add potatoes. Cover and heat to boiling; reduce heat. Cook 30 to 35 minutes or until tender; drain. Cool slightly; cut into cubes.
  2. Mix mayonnaise, vinegar, mustard, salt and pepper in large glass or plastic bowl. Add potatoes, celery and onion; toss. Stir in eggs. Cover and refrigerate at least 4 hours until chilled.

I have a few friends that require gluten free meals but we ended up not seeing it helping my son so we took him off of the diet but they are always sharing some ideas that I need to post in the group ;)

Newman's own makes a great gf ranch dressing and we use in our potato salad.  We cut the mayo in half and substitute the other half with the dressing for a nice twist on the classic version.

 I personally don't know of anyone who needs gluten-free foods, so I don't have any recipes.

 I don't have  any recipes for  gluten free...... But i have to say Sara  has been posting  gluten free recipes and they   sound so  deli sh.... i might have to try  some them out...   your recipe sounds good too:O)

I don't have a fav as I don't know anyone who requires a gluten free meal but I have seen some really good ones on the Betty Crocker site.

I don't know if I have any gluten free recipes or not but I've been wanting a recipe like this (less the onions) so thank you!!!
