ISO recipe for a creamy mexican cheese sauce...

When we lived at Fort Riley there was a Mexican restaurant that DH would take me to.  I would get a dish called Pollo Loco. It was a piece of grilled chicken with mushroom, onions and peppers. It came with an amazing white cheese sauce.

Does anyone at all have any ideas what this cheese sauce may have been? and if so does anyone have a recipe for it?

 Was is like the queso cheese sauce you can order with tortillas? That stuff is the best. I've not made it at home before but there are a ton of recipes for that stuff all over the internet. I'll look some up and you can see if they're similar.
