Sometimes you just have to add a little spice to your week. I'm not talking about tongue numbing hotness, but just a little kick to make things interesting. Luckily, my whole family likes a little spice - whether it's a mild salsa or spicy beef tacos. That's why we love this new recipe for Spicy Grilled Potato Planks - super easy to make and full of flavor. Here's how you do it:
3 medium potatoes (1 1/2 pounds)
1/3 cup butter or margarine
1/2 teaspoon salt
1/8 teaspoon ground red pepper (cayenne)
1/8 teaspoon garam masala, if desired
1 large garlic clove, finely chopped
- Place potatoes in enough water to cover (salted if desired) in 3-quart saucepan. Cover and heat to boiling. Boil about 15 minutes or until almost tender; drain. Cool slightly.
- Heat coals or gas grill for direct heat.
- Heat remaining ingredients to boiling; remove from heat. Cut each potato lengthwise into 4 or 5 slices. Brush potatoes generously with butter mixture.
- Cover and grill potatoes 4 inches from medium heat about 20 minutes, turning and brushing 2 or 3 times with butter mixture, until golden brown and tender.
Moms, how do you add a little spice to your weeknight dinners?
