I don't care for lamb, but my husband loves it. I thought I would surprise him with lamb loin chops for dinner tonight. Does anyone have any ideas as to how to cook them? I am wondering if I could just brush with olive oil, season with salt and pepper and broil like a steak.
Also, I don't have any mint jelly. Do I need it.

You Need:
8- lamb rib chops or lamb loin chops, about 1 inch thick (about 2 lb)
- 2
- tablespoons dry white wine or apple juice
- 2
- tablespoons honey
- 1
- teaspoon chopped fresh or 1/4 teaspoon dried mint leaves
- 1/4
- teaspoon salt
- 1/8
- teaspoon pepper
To Make:

One teaspoon chopped fresh or 1/4 teaspoon dried thyme leaves can be substituted for the mint.
Brush 1/2-inch-thick slices of a small onion with vegetable oil and grill for 5 to 10 minutes. Place a couple of the onion rings on the bone of each chop. Thread fresh mint sprigs through the onion rings. Place on a platter for serving.
