Light and Fresh - Ranch Spinach Pasta Salad

Summertime is here. And it has me thinking about picnics. Every summer I go over recipes and think about which ones are the most portable - perfect for an evening in the park or a day at the beach. The clear winners are always hearty pasta salads. There are so many varieties that there is always something to please even the pickiest palates. This recipe for Ranch Spinach Pasta Salad combines farm fresh veggies and tangy ranch for the ultimate meal.

1 box Betty Crocker® Suddenly Salad® ranch & bacon pasta salad mix

1/2 cup Hidden Valley® The Original Ranch® dressing

1/2 teaspoon dried dill weed

1 1/2 cups small broccoli florets

1/2 cup thinly sliced red bell pepper, cut into bite-size strips

1/2 cup cucumber slices, halved

4 medium green onions, sliced (1/4 cup)

  1. Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
  2. Drain pasta; rinse with cold water. Shake to drain well.
  3. In medium bowl, mix seasoning mix, dressing and dill weed. Stir in pasta and remaining ingredients. Store any remaining salad covered in refrigerator.

Yummy! I'm going to try this. What a great idea. Sometimes I'll include tortellini's, mozzarella, pepperoni. It just depends. :)

We add chicken, tomatoes, broccoli, and Italian dressing to Farfalle pasta.  It's very good.

I really like the Suddenly Salad just like it is without adding all the extras.

 I add tomatoes, olives and green onions.  Brocoli florets is a great idea.
