Light and Fresh - Ranch Spinach Pasta Salad

Summertime is here. And it has me thinking about picnics. Every summer I go over recipes and think about which ones are the most portable - perfect for an evening in the park or a day at the beach. The clear winners are always hearty pasta salads. There are so many varieties that there is always something to please even the pickiest palates. This recipe for Ranch Spinach Pasta Salad combines farm fresh veggies and tangy ranch for the ultimate meal.

1 box Betty Crocker® Suddenly Salad® ranch & bacon pasta salad mix

1/2 cup Hidden Valley® The Original Ranch® dressing

1/2 teaspoon dried dill weed

1 1/2 cups small broccoli florets

1/2 cup thinly sliced red bell pepper, cut into bite-size strips

1/2 cup cucumber slices, halved

4 medium green onions, sliced (1/4 cup)

  1. Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
  2. Drain pasta; rinse with cold water. Shake to drain well.
  3. In medium bowl, mix seasoning mix, dressing and dill weed. Stir in pasta and remaining ingredients. Store any remaining salad covered in refrigerator.

This looks good if it was warm. I don't do cold pasta salads.

i never get how "xxxxxx" salad anthing is portable? i always worry about eating them because they seem to sit out so long lol

this looks so yummy. It really depends on what I have on hand and what I am in the mood for. I do always add cheese. sometimes tuna or chicken.

 I love picnics and pasta salad.....just don't fix them very often.  I usually like just shredded carrots and onions in my pasta salad.  I need to come up with one that has asparagus in it for Matt.

I agree with eliminating the boxed stuff. I like celery seeds in mine. And pepperoni.
