FRENCH CHOCOLATE DESSERT

French Chocolate Dessert

Toasted almonds may be used on top as a garnish instead of being used inside the dessert.
Envelopes unflavored gelatin 2 x 1/4 oz.
Granulated sugar 1/2 cup
Cocoa 1/2 cup
Egg yolks (large) 2
Skim evaporated milk 13 1/2 oz.
Skim milk 1 cup
Amaretto liqueur 1/2 cup
Egg whites (large) 2
Envelope dessert topping (such as Dream Whip) 1
Skim milk 1/2 cup
Vanilla 1 tsp.
Chocolate wafer crumbs 1/2 cup
Homemade Chocolate Angel Food Cake, 4 cups
cut into bite-size pieces
(about 1/2 cake)
Toasted slivered almonds 2 tbsp.
Chocolate chips, melted (optional) 1/4 cup

Combine gelatin, sugar and cocoa in medium saucepan. Beat egg yolks and evaporated milk together in small bowl. Add to cocoa mixture. Heat on medium-low, whisking constantly, until gelatin is dissolved and slightly thickened.

Whisk in first amount of skim milk and liqueur. Refrigerate, stirring occasionally, until thickened.

Beat egg whites until soft peaks form. Gradually add gelatin mixture, beating until fluffy.

Beat dessert topping, second amount of skim milk and vanilla together according to package directions. Beat into gelatin mixture.

Lightly grease sides and bottom of 10 inch (25 cm) springform pan. Sprinkle sides and bottom of pan with wafer crumbs. Place 2 cups (500 mL) cake pieces on top of crumbs in single layer. Pour 1/2 chocolate mixture evenly over cake pieces. Shake pan to fill in any spaces. Sprinkle with toasted almonds. Layer remaining cake pieces over almonds. Pour remaining chocolate mixture over cake. Smooth evenly.

Drizzle with melted chocolate if desired. Chill several hours. Cuts into 12 pieces.
