Muffins

Anyone have a recipe for banana or blueberry? I have an abundance of both fruits!

This one Olivia can help you with, I have been making it with kids as young as 2!

You Need:

3 large ripe bananas

1 cup sugar

1 egg

4tbs butter (melted & cooled)

1 tsp salt

1tsp baking soda

1 1/2 cups flour

2 large bowls

muffin tins or loaf pan

To Make:

1. Preheat the oven to 325F

2. lighty grease pan (or use muffin cups)

3. In 1 bowl mash up the bananas (kids LOVE doing this part. Also don't worry if they leave big chunks, if u like banana its super yummy) and then beat in the sugar,egg & butter.

4. In the other bowl mix up the dry ingredients together.

5. Add the dry to the wet & mix well.

6. Bake 55 to 60 mins for loaf and 25-35 mins for muffins.

Here is a muffin recipe I use for Blueberry and Strawberries.

3/4 cup all-purpose flour

1/3 cup sugar

1/4 teaspoon baking soda

1/4 teaspoon ground cinnamon

1 egg

1/4 cup canola oil

2 tablespoons milk

1/3 cup chopped fresh strawberries

1/4 cup fresh or frozen blueberries

3 tablespoons white baking chips

In a small bowl, combine the flour, sugar, baking soda and cinnamon. In another bowl, whisk the egg, oil and milk. Stir into dry ingredients just until moistened. Fold in the strawberries, blueberries and vanilla chips.

Fill paper-lined muffin cups three-fourths full. Bake at 375° for 22-26 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Yield: 6 muffins.

Editor's Note: If using frozen blueberries, use without thawing to avoid discoloring the batter.

Here is a regular Blueberry Muffin recipe I use alot.

3/4 cup milk

1/4 cup lemon juice

2 cups all-purpose flour

3/4 cup sugar

1 tablespoon baking powder

1/2 teaspoon ground cinnamon

1/2 teaspoon salt

1 egg, lightly beaten

1/4 cup vegetable oil

1 cup fresh or frozen blueberries

In a small bowl, mix milk and lemon juice; set aside.

In a large bowl, combine flour, sugar, baking powder, cinnamon and salt. Set aside. Add egg and oil to milk mixture. Gently stir into flour mixture just until moistened. Fold in blueberries.

Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 22-24 minutes or a toothpick inserted in the muffin comes out clean. Cool for 5 minutes before removing from pan to a wire rack to cool. Makes 1 dozen.
